Description
Smart4Cheese is an initiative funded by the Ministry of Industry, Trade and Tourism through the 2022B call of the AEIs support programme.
The overall objective of the project is to promote the integral digitalisation of the dairy sector through industrial research into innovative online photonic technologies and advanced algorithms that will improve the sustainability of the sector.
Smart4cheese will optimise traceability from farm to table through on-site control with portable NIR connected to the platform with data from the professional milk laboratory in Galicia (LIGAL), allowing quality checks at different points and with different technologies.
In addition, it will generate a platform in the cloud equipped with artificial intelligence that will allow, on the one hand, to improve the energy performance of all processes and contribute to optimising key variables, leading the sector towards a greener policy, and on the other hand, to generate purchasing decision capacity in terms of price vs. product quality.
Specific objectives of SMART4CHEESE
- Improvement of traceability control through portable NIR and control with App connected to the cloud that allows the production plant to know in real time all possible deviations and milk qualities that affect production.
- Creation of a business intelligence platform equipped with artificial intelligence that allows an easy and clear presentation of all key production processes. This will save time compared to conventional reports and improve decision making.Definition of the critical variables and processes in the plant thanks to the massive collection of data that will lead the cheese-making sector towards a SMART GREEN CHEESE FACTORY, in order to improve both the energy efficiency and the environmental sustainability of the companies involved.
- Improve the perception of the sector’s sustainability by selecting the products that meet the combination of low carbon footprint and the most economically sustainable for the company.
